The location for the Ark was chosen deliberately: above the fog line and with a sweeping view. The visual journey takes us from Slovenia and Italy through Styria and back to Carinthia. The most striking peak is Triglav in the Julian Alps, rising to 2,864 meters. Turning westward from the Carnic Alps, the Dobratsch, Gerlitzen, Nockberge, and Niedere Tauern rise up. This view is fantastic, impressive, and soothing all at once. It’s no wonder that the rooms with panoramic views are among the favorites.
At Carinthia’s first organic hotel, organic ingredients are prepared in a vegetarian style. According to Dr. M. O. Bruker’s nutritional philosophy, these foods are “alive”—rich in vitamins, minerals, trace elements, enzymes, and unsaturated fats. One-third of the menu consists of raw foods. The breakfast buffet features plenty of fruits and vegetables. And dinner begins with a large serving of salad. We are also happy to prepare vegan or gluten-free meals.
The menu features what’s in season and grown locally. For example: asparagus and strawberries in the spring. Leafy greens and cherries in the summer. Pumpkin and apples in the fall. Root vegetables and dried fruits in the winter. Exceptions prove the rule. Then things get exotic—with passion fruit and dates at the breakfast buffet or pakoras, Indian vegetable fritters in batter, as a main course. Because we like to be a little crazy. And we were proud to be awarded the Grüne Haube in 1994 for our natural cuisine.
