Arrival: A traditional Umbrian dinner awaits you, served with Mediterranean flair by our cook, Mamma Ornella.
Sunday through Tuesday
During an introductory talk and olive oil tasting on Sunday morning, you’ll learn everything there is to know about olive oil and the olive harvest.
Then it’s time for hands-on work. You’ll participate in the olive harvest for two days under expert guidance.
Afterward, you’ll join us at the oil mill to watch as the olives you picked are transformed into premium organic olive oil—from weighing the olives to bottling the fresh, fragrant oil.
Wednesday
You’ll accompany a truffle hunter and his dog on a truffle hunt and help carefully extract the precious truffles from the ground. Afterward, you’ll be treated to a multi-course meal featuring truffle delicacies.
After the truffle meal, you’ll visit one of the last small, traditional producers of Vin Santo, the sweet wine typical of central Italy.
You’ll learn how this wine has been made in the traditional way for hundreds of years, what gives it its very special, nuanced flavor, and what legends surround its name.
Thursday
You’ll join us at a small but excellent organic winery whose wines have won numerous awards, and which you’ll of course have the chance to taste.
To complement the wine, there will also be a tasting of typical cured meats—the “Norcineria,” named after the Umbrian town of Norcia, for which Umbria is famous.
Friday
The day is yours to spend as you wish, exploring the area rich in attractions along the border between Umbria and Tuscany.
Here you can visit many of the ancient Etruscan cities, such as Perugia, Cortona, Montepulciano, Città della Pieve, and countless others, or simply enjoy the picturesque landscape.
In the evening, we’ll host a farewell “olive picker’s dinner.” Of course, you’ll also receive your picker’s share of the olive oil you harvested.

Departure
